One meal in particular always has room for improvement... and that's breakfast. I love eggs. I love to eat eggs. The problem comes in finding different ways to eat eggs. Over the weekend I tried this recipe for Sausage and Broccoli Egg Muffins that I have been stalking for a couple of weeks. Finally tried it, and I gotta say, I think I gotta hit here!
I pretty much followed the recipe. Only change was using cut up turkey sausage links instead of italian, and shredded mexican cheese instead or parmesan. They actually microwave really well and the recipe makes a really hearty muffin! I made them on sunday and they will be GREAT for my rush mornings.
