"I wish you were here"


... just got a text from one of my very close friends in Atlanta and that's what it said.

In April I left Atlanta to come back up north to Delaware/Maryland for a job. I loved living in Atlanta. So much to do, so many people, but career wise things just were not working. I had moved down there right after graduation, but I had no job and I was sleeping on the couch in my friends tiny one bedroom apartment. After some serious grinding on the job search I started working 2 jobs and making just enough to get by. When the holidays came I couldn't even go see my family because of work. My first and LAST Christmas spent alone.

But all that being said, I had a great time down there and kind of fell in love with the city, and have no regrets. I don't even regret Harry, but that's a whole other topic in itself

Now I'm back in Dela-where? and all I can do is think about what I could be doing in the "A".
I know moving home was the right thing, but I sure do wanna go back! Hoopefully I can make that happen

BIG YUM-O

so I today is my day to cook for my roommate and I, and I decided to try something different. I made a no-noodle, vegetarian lasagna and it is sooooooooooooo good! Got the idea from my fave cook Miss Rachel Ray, with a few twists, but overall great. Seriously... I can barely believe it was me who made it.

Bet you didn't think you would see a post from me did you? So I am trying get this right for the god knows how manyith time.  I'm going to go through my blogroll and read for the majority of the day and find out why all of you beautiful women can get it right but I cannot... PS thanks Ronke for the comment back in April!  I needed to hear from someone! Chef time!

Hear ye hear ye... bring me all ye recipes that are low carb low sugar and delicious! Seriously.. bring em.  Some things will never change, like my constant need to stop spending eating out!   One meal in particular always has room for improvement... and that's breakfast.  I love eggs. I love to eat eggs.  The problem comes in finding different ways to eat eggs.  Over the weekend I tried this recipe for  Sausage and Broccoli Egg Muffins  that I have been stalking for a couple of weeks.  Finally tried it, and I gotta say, I think I gotta hit here! I pretty much followed the recipe.  Only change was using cut up turkey sausage links instead of italian, and shredded mexican cheese instead or parmesan.  They actually microwave really well and the recipe makes a really hearty muffin!  I made them on sunday and they will be GREAT for my rush mornings.
